Quinoa is a small seed that has undergone special treatment and the top bitter layer has been removed.
It deservedly bears the definition of "super food" because it contains a high amount of nutrients - amino acids, vitamin E, calcium, iron, phosphorus and others.

Method of preparation

Rinse the quinoa thoroughly under lukewarm running water. For every 1½ cup of quinoa, heat 1 tablespoon of fat. Stir constantly for about 6-8 minutes so as not to burn. Pour 2 cups of cold water or broth for every 1 cup of quinoa. Boil. Stir in the quinoa, then reduce the heat. Cover and simmer until all the liquid is absorbed, about 15 minutes. Use a fork to separate the grains. It is ideal as an addition to salads, soups or any other dishes of your choice.

Chilli with quinoa

Ingredients

  •     1 cup boiled quinoa
  •     1 kg of minced beef
  •     1 tablespoon olive oil
  •     1 onion, finely chopped
  •     4 cloves garlic - minced
  •     1 black pepper - ground
  •     1 tablespoon chilli powder
  •     1 tablespoon ground cumin
  •     1 can of canned tomatoes
  •     2 cans of black beans, rinsed and drained
  •     1 sprig of green pepper, finely chopped
  •     1 red pepper, finely chopped
  •     1 zucchini, cut into cubes
  •     1 teaspoon dried oregano leaves
  •     1 teaspoon dried parsley
  •     1 pinch of salt and ground black pepper to taste
  •     1 cup frozen corn
  •     ¼ cup chopped fresh coriander

Instructions

  •     Heat a large skillet over medium heat and roast the meat. Cook and stir until the veal turns brown.
  •     Heat olive oil in a large pan over medium heat. Stir in onion, garlic and black pepper.
  •     Cook and stir until the onion is soft and translucent, about 5 minutes.
  •     Season with chilli powder and cumin and cook for another 1 minute to release the aroma of the spices.
  •     Stir in tomatoes, black beans, green peppers, paprika, zucchini, oregano and parsley.
  •     Season to taste with salt and pepper.
  •     Simmer until the peppers are soft, about 20 minutes.
  •     Once the red and green peppers soften, add the quinoa, meat and corn. Return to the cooker and cook for 5 minutes to reheat.
